Zutaten (Für More than 4)

  • 400 g Exquisa Fitline ZERO Coconut taste
  • 150 g tender oat flakes
  • 2 ripe, medium bananas
  • 1 tsp baking powder
  • 2 eggs
  • 75 ml low-fat milk
  • 50 ml mineral water
  • 3 tbsp coconut flakes
  • ½ tsp cinnamon
  • 2 tbsp lemon juice
  • 100 g mixed berries (e.g. raspberries and blueberries)
  • fat for the waffle iron

Zubereitung

  • For the waffles, finely grind the oat flakes in a food processor or high-powered blender. Peel 1 banana and mash finely with a fork. Place the oat flakes and mashed banana in a mixing bowl with 200 g Exquisa ZERO fromage frais coconut flavour, baking powder, eggs, milk and mineral water and mix to a smooth dough. Leave the dough to swell for approx. 5 minutes.
  • Preheat and grease a Belgian waffle iron (waffle iron for 2 rectangular waffles; 9 x 15 cm each). Pour approx. 2 tbsp dough per waffle into the hot waffle iron and bake one after the other for 4-5 minutes until golden brown. Keep the finished waffles warm.
  • For the coconut cream, roast the coconut flakes in a pan without fat until golden brown. Leave to cool down. Mix the rest of the Exquisa ZERO fromage frais coconut flavour with the cinnamon, lemon juice and 2 tablespoons of coconut flakes until smooth.
  • Peel the remaining banana and cut into slices. Wash and sort the berries. Top the waffles with coconut cream and banana slices and sprinkle with berries and remaining coconut flakes.
