Ingredients (for 1 Person)

  • 200 g Fitline granular cream cheese 0.8% fat
  • 2 small zucchini (450-500g)
  • 1 egg (size M)
  • 100 g mozzarella (grated firm, 45% fat)
  • 125 g cherry tomatoes
  • 1 shallot
  • 150 g strained tomatoes
  • 2-3 stalks basil
  • 1 tablespoon oil
  • Salt
  • Pepper
  • Baking paper

Preparation

  • Clean, wash and coarsely grate zucchini. Put zucchini graters on a clean gauze cloth and squeeze well. First mix zucchini with egg, 60 g grated mozzarella, a little salt and pepper. Then fold in 150 g cream cheese. Line a baking tray with baking paper. Form a round pizza base (approx. 24 cm Ø) from the zucchini mixture and place on the tray. Bake in a preheated oven (electric oven: 250 °C/ convection oven: 225 °C) for 15-20 minutes.
  • Wash and halve cherry tomatoes. Peel and finely dice shallot. Heat oil in a pot. Sauté shallot cubes in it. Add cherry tomatoes and sauté. Deglaze with strained tomatoes, bring to the boil and simmer for about 1 minute. Season tomato sauce with salt and pepper.
  • Wash basil and shake dry. Pluck leaves from stems. Remove zucchini cream cheese pizza from oven and arrange. Drizzle with tomato sauce. Sprinkle 40 g mozzarella on top. Spread 50 g cream cheese on the pizza. Garnish with basil leaves.
